This past weekend I had the bright idea to do a little baking; baking isn’t really my thing, neither is cooking for that matter. But I figured how hard could it be to make 2-ingredient muffins? And well they involved pumpkin and Alex loves pumpkin anything so I thought I would give it a go.
I don’t really have a name for these things, I used a spice cake mix and a can of pumpkin and they are super low calorie (like 100 calories per muffin according to Weight Watcher, at least that’s what I’ve been told…). So we shall just call them
Healthy Spice Cake Pumpkin Muffins
You will need:
A box of spice cake mix
1 can of pumpkin
I mixed the can of pumpkin, the cake mix and a lone banana that was going bad in a big bowl. I added a little bit of water to get things moving and then added a few spoonfuls of coconut oil (just because, this step is not necessary!)
Instead of using a muffin tin I thought miniature loaves would be fun so I spooned the batter into the pan and baked them according to the time on the box for a loaf. I actually had to put them back in for more time though because they weren’t quite cooked all the way through.
Once they cooled just a bit I served them warm with a pumpkin spice spread that I had. They were so delicious! I may have even had some before my 16 mile run the next morning! And they best part is they were super easy and they won’t put you over on calories either! Total win in my teeny tiny cookbook!
